Deixar que dobli el seu volum.<\/td>\n<\/tr>\n<tr>\n<td style=\"background-color: #eef5e1; border-color: #9bbb59;\">2. AMASSAT<\/p>\n<p>Incorporar tots els ingredients \u00a0(excepte les dos terceres parts de la mantega) junt amb l&#8217;esponja i amassar fins que la massa es comenci a lligar. Agregar la resta de la mantega i amassar fins que guanyi consist\u00e8ncia i tingui una mica d&#8217;elasticitat (no massa, \u00a0ja que podria arrugar les peces un cop cuites). La temperatura aconsellable de la massa \u00e9s 26\u00ba C.<\/td>\n<\/tr>\n<tr>\n<td style=\"background-color: #e4f4c7; border-color: #9bbb59;\">3- PREFERMENTACI\u00d3:<\/p>\n<p>Deixar reposar la massa en bloc durant 15 min.<\/td>\n<\/tr>\n<tr>\n<td style=\"background-color: #eef5e1; border-color: #9bbb59;\">4- DIVISI\u00d3 I FORMAT:<\/p>\n<p>Divisi\u00f3 de la massa en porcions del pes desitjat, tenint en compte pesar la massa amb un 20% menys del pes que desitgi que tingui la coca una cop acabada.<\/p>\n<p>Formar les porcions en forma de barrot i deixar reposar aproximadament 10 min, tapades amb un pl\u00e0stic per evitar que s&#8217;encrosti. Despr\u00e9s estirar amb l&#8217;ajut d&#8217;un curr\u00f3 donant forma ovalada i allargada.<\/p>\n<p>Col.locar en llaunes lleugerament oliades i a continuaci\u00f3 decorar como es desitgi (amb crema pastissera, fruites confitades&#8230;).<\/td>\n<\/tr>\n<tr>\n<td style=\"background-color: #e4f4c7; border-color: #9bbb59;\">5- FERMENTACI\u00d3:<\/p>\n<p>Fermentar, amb poca humitat i a una temperatura no superior a 30\u00baC, el temps necessari fins que dobli el seu volum.<\/p>\n<p>Una cop fermentada, es poden esparcir pinyons per damunt (previament mullats\u00a0amb aigua per evitar que es cremin) i finalment cobrir amb sucre.<\/td>\n<\/tr>\n<tr>\n<td style=\"background-color: #eef5e1;
