1-REMULL:<\/p>\n

Pesem els flocs i un 30% de l’aigua total ( 585 g), ho posem en un recipient i barregem fins que quedi incorporada l’aigua.<\/p>\n

Reservem mentre elaborem la masa.<\/td>\n<\/tr>\n

\n

2-AMASSAT:<\/p>\n

Incorporem tots els ingredients junt amb la resta de l’aigua ( 1365 g) i amassem. Quan veiem que a la massa li quedi poc per estar amassada incorporem els flocs de civada en remull i barregem suaument fins que s’integrin a la massa.<\/td>\n<\/tr>\n

3-REP\u00d2S EN BLOC AMB PLECS:<\/p>\n

Deixem reposar 2 h (24-25\u00baC). \u00a0Fem 2 plecs a la massa durant el rep\u00f2s en bloc i aix\u00ed aconseguim donar m\u00e9s for\u00e7a i m\u00e9s cos.<\/td>\n<\/tr>\n

4- DIVISI\u00d3 I FORMAT:<\/p>\n

Dividim i formem. Podem arrebossar les peces amb els flocs de civada.<\/td>\n<\/tr>\n

\n

6-FERMENTACI\u00d3:<\/p>\n

Fem una segona fermentaci\u00f3 d’aproximadament 45-60 min (24-25\u00baC)<\/td>\n<\/tr>\n

\n

7- COCCI\u00d3:<\/p>\n

Forn fort d’entrada i cocci\u00f3 190-200\u00baC. El temps variar\u00e0 segons la mida de les peces i les caracter\u00edstiques del forn.<\/td>\n<\/tr>\n<\/tbody>\n<\/table>\n
